Creamy Chicken Saute
- 1 tbsp. olive oil
- 1 lb. skinless, boneless chicken breasts
- 1/4 tsp. salt
- 1/4 tsp. Pepper
- 2 yellow squash
- 1/4 c. heavy cream
- 2 tbsp. balsamic vinegar
- In 12-inch skillet, heat olive oil on medium-high.
- Add chicken and sprinkle with salt and pepper.
- Cook 3 to 4 minutes or just until golden on all sides, stirring occasionally.
- Stir in squash and cook 3 minutes or until just tender.
- Stir in heavy cream and vinegar.
- Reduce heat to low and cook 3 minutes or until sauce thickens.
