Tuna Nicoise Salad
- 1/3 cup KRAFT Egg Mayonnaise Omega 3
- grated rind of 1 lemon Safeway 4 ct For $5.00 thru 02/09
- 2 teaspoons lemon juice Safeway 4 ct For $5.00 thru 02/09
- 2 teaspoons Dijon mustard
- 500g chat potatoes, roasted and halved
- 425g can tuna in oil or brine, well drained
- 250g baby green beans, cooked until just tender, drained and cooled
- 4 hard boiled eggs, halved
- 1 cup parsley leaves
- 1 small red onion, sliced
- 1/3 pitted Kalamata olives
- COMBINE the mayonnaise with lemon rind, juice and Dijon mustard.
- Set aside.
- ARRANGE remaining ingredients on a serving platter and drizzle over the mayonnaise.
- Serve immediately.
