Chicken in Marmalade Sauce
- 4 chicken fillets, no skin
- 14 cup flour
- 1 teaspoon curry powder
- 12 teaspoon salt
- 14 teaspoon pepper
- 125 g butter
- 4 tablespoons vegetable oil
- 2 tablespoons sherry wine
- 13 cup marmalade
- 13 cup orange juice
- Mix flour, curry, salt and pepper together in a freezer bag.
- Place chicken in bag and coat all pieces.
- Heat oil and 80g of the butter in frypan, add chicken, cook for 10 minutes.
- Remove, keep warm.
- Add leftover ingredients to frypan, stir until combined, then pour over chicken or serve in a gravy jug.
