Cupcakes with Lemon Cream Cheese Frosting

  1. Reserve 1 Tbsp.
  2. drink mix.
  3. Place remaining drink mix in large bowl.
  4. Add water measure listed on cake mix package; stir until drink mix is dissolved.
  5. Add cake mix with oil and eggs (listed on cake mix package); beat with mixer until blended.
  6. Stir in food coloring.
  7. Spoon into 24 paper-lined muffin cups.
  8. Bake as directed on package for cupcakes.
  9. Cool in pan 10 min.
  10. Remove from pan to wire racks.
  11. Cool completely.
  12. Beat reserved drink mix and remaining ingredients with mixer until blended; spread onto cupcakes.
