Leek, Sour Cream and Goat's Cheese Egg Thingy
- 2 big leeks, finely sliced
- 30 g butter
- 4 eggs, lightly beaten
- 200 g sour cream
- 150 g fresh goat cheese, sliced
- salt
- fresh ground black pepper
- Put sliced leeks in medium pan with butter and soften - about 15 minutes.
- Season well.
- Lightly beat the eggs and combine with sour cream and season well.
- Scatter cooked leeks into baking tray and top with egg mixture, then slices of goats cheese.
- Bake in 180 degree oven until eggs have just set.
