Pumpkin Muffins
- 2 eggs, beaten
- 1 12 cups evaporated milk
- 15 ounces canned pumpkin
- 12 cup oil
- 1 cup applesauce
- 3 cups flour
- 34 cup wheat germ
- 1 12 cups oats
- 1 cup sugar
- 3 tablespoons brown sugar
- 2 tablespoons baking powder
- 2 teaspoons cinnamon
- 12 teaspoon nutmeg
- 12 teaspoon ginger
- 14 teaspoon clove
- 1 teaspoon salt
- 3 tablespoons maple syrup
- 12 cup brown sugar, packed
- 1 teaspoon cinnamon
- 2 tablespoons butter
- 12 cup walnuts, chopped

- Mix wet ingredients well, then add dry ingredients and mix until moist.

- Fill greased muffin pans 3/4 full and pat on the topping.

- Bake at 400 for 18 - 22 minutes.

- Serve hot out of the oven with butter or cream cheese.
