Kiwifruit Sherbert

  1. Combine 1/2 cup sugar and water.
  2. Bring to boil; stir until sugar dissolves.
  3. Boil, covered, over medium heat 5 minutes.
  4. Beat egg whites until stiff; gradually add remaining 1/4 cup sugar.
  5. Slowly pour hot syrup into whites; beat constantly until mixture has cooled.
  6. Peel and purAe kiwifruit to measure 3/4 cup.
  7. Gradually beat lemon-lime beverage, kiwifruit purAe and lime juice into egg-white mixture.
  8. Freeze partially.
  9. Spoon mixture into chilled mixer bowl and beat with chilled beaters until mixture is light and foamy.
  10. Return to freezer and freeze until firm.
