Shrimp Tacos With Spicy Onion Slaw
- 8 flour tortillas (chi chis whole wheat, are delicious!)
- 12 -16 ounces frozen popcorn shrimp, cooked
- 1 avocado, peeled, pitted and thinly sliced
- 1 cup Mexican blend cheese
- 12 cup fat free ranch dressing
- 2 tablespoons extra hot hot sauce
- 1 cup shredded lettuce
- 2 tomatoes, chopped
- 1 -2 green onion, chopped finely
- 2 slices red onions, chopped finely
- 2 slices Spanish onions, chopped finely
- 2 tablespoons fat free sour cream
- 1 lime, juice of
- salt and pepper
- First mix ranch and hot sauce, use more or less of each until you reach your desired heat level.
- Then mix all ingridients (excluding:tortillas, shrimp, avocados and cheese) in a bowl, should be a slightly runny slaw mix, add more lettuce and/or sour cream if too watery, or more spicy ranch if too dry.
- Put shrimp in tortilla, top with a sprinkle of cheese, a heaping spoonful of onion slaw mix, then top with a few slices of avocados.
- And Enjoy!
