Coconut Banana Bread
- 12 cup shortening (I always use butter) or 12 cup butter (I always use butter)
- 1 cup white sugar
- 1 12 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 3 ripe bananas
- 12 cup pecans or 12 cup walnuts
- 12 cup unsweetened coconut
- Preheat oven to 325 degrees F (165 degrees C).
- Lightly grease an 8x4 inch loaf pan.
- In a large bowl, cream the shortening and sugar.
- Sift in the flour, baking soda coconut, pecans or walnuts and salt.
- Blend in the mashed bananas.
- Pour batter into prepared pan.
- Bake in preheated oven for 60 minutes, or until a knife inserted into center of loaf comes out clean.
