Easy Quinoa Fried Rice

  1. Rinse quinoa 2-3 times with cold water.
  2. In a deep large skillet, combine water (or chicken stock) and quinoa and bring to a boil.
  3. Reduce heat to a simmer and cook until liquid is absorbed.
  4. Season with salt if desired.
  5. Fluff with fork.
  6. Chill for at least 1 hour or overnight.
  7. Heat a wok or saute pan over high heat.
  8. Add 1/2 tablespoon coconut oil.
  9. Add eggs, let cook for 30 seconds, then scramble.
  10. Transfer to a clean plate.
  11. Return wok to heat and set temperature to medium high.
  12. Add 1/2 tablespoon coconut oil and onion.
  13. Cook onion for 1 minute, stirring frequently.
  14. Add garlic, mixed vegetables, half of the scallions, ginger and red pepper flakes (optional).
  15. Cook for 3 more minutes, stirring frequently.
  16. Add quinoa and remaining 1/2 tablespoon coconut oil and stir fry for 1 minute.
  17. Add soy sauce, stir fry (or teriyaki) sauce and sesame oil.
  18. Stir to incorporate.
  19. Add scrambled eggs and stir again.
  20. Top with remaining scallions.
