grilled Jalapeno chicken sandwich
- 2 slice colby jack cheese
- 2 slice pepper jack cheese
- 1 butter or spread
- 4 slice Italian bread
- 2 slice red bell pepper ring
- 2 jalapeno
- 1 flattened boneless skinless chicken breast halved
- 2 slice red onion
- 1 mayonnaise
- 1 spicy mustard
- 1 cajun or creole seasoning
- cut red onion ring, red bell pepper ring, cut the stem off the Jalapeno and cut into equal lengths pieces the length of the Jalapeno
- hammer boneless skinless chicken breast 1/2" flat and season with creole or Cajun seasoning to your taste a d set aside.
- butter you bread and set aside your cheese
- preheat BBQ grill to 375- 400
- place chicken on upper level of grill for 5 mins and flip chicken then place vegetables on grill next to chicken for about 5 minutes be careful not to burn them.
- while chicken and vegetables are cooking place bread on lower grill buttered side down.
- leave there until the bread feels toasted to touch, use a spatula to remove bread it may stick.
- remove bread and vegetables at the same time and place cheese on your chicken.
- prepare your bread with mayonnaise and spicy mustard then transfer chicken from grill to your bread and stack on your Jalapenos, red bell pepper and onion
