Crispy Fish With Black Bean, Oyster and Basil Sauce

  1. Place cornstarch in a bowl and dredge the fish through the cornstarch.
  2. Shake off the excess.
  3. Add oil to pan and fry fish on both sides until fish flakes with a fork.
  4. Set aside fish.
  5. In the same pan, add oyster sauce, black bean sauce, chicken stock, sugar and basil.
  6. Mix 1/2 cornstarch to 1/2 tablespoon water in a small bowl and add to the sauce when it comes to a boil.
  7. Cook until sauce thickens.
  8. Pour sauce over fish just before serving.
