Crispy Fish With Black Bean, Oyster and Basil Sauce
- 1 tablespoon oil
- 13-12 cup cornstarch, plus
- 12 tablespoon cornstarch, divided
- 3 lbs tilapia fillets or 3 lbs flounder or 3 lbs sole
- 1 tablespoon oyster sauce
- 1 tablespoon black bean garlic sauce
- 1 cup chicken stock
- 12 tablespoon sugar
- 14 teaspoon dried basil
- Place cornstarch in a bowl and dredge the fish through the cornstarch.
- Shake off the excess.
- Add oil to pan and fry fish on both sides until fish flakes with a fork.
- Set aside fish.
- In the same pan, add oyster sauce, black bean sauce, chicken stock, sugar and basil.
- Mix 1/2 cornstarch to 1/2 tablespoon water in a small bowl and add to the sauce when it comes to a boil.
- Cook until sauce thickens.
- Pour sauce over fish just before serving.
