Hash Brown Potato Salad Recipe
- 1 (32 ounce.) pkg. frzn Southern style hash brown potatoes
- 3/4 c. Miracle Whip salad dressing
- 1/2 c. celery slices
- 1/2 c. minced green pepper
- 1/2 c. minced onion
- 1/4 c. minced pimento
- 2 hard-cooked Large eggs, minced
- Salt & pepper
- Lettuce
- Parsley
- Radish roses
- Add in potatoes to 1 qt boiling water; return to boil.
- Cover; cook 2 min or possibly till tender.
- Drain well.
- Combine potatoes, salad dressing, celery, green pepper, onion, pimento and Large eggs; mix lightly.
- Season to taste; chill.
- Add in additional salad dressing before serving, if you like.
- Serve in lettuce-lined bowl; garnish with parsley and radishes.
- 8-10 servings.
