Strawberry-Rhubarb Cup Dessert
- 1 lb. fresh rhubarb, cut into 1/2-inch-thick slices
- 1/2 cup sugar
- 1 cup water
- 1 pkg. (3 oz.) JELL-O Strawberry Flavor Gelatin
- Toss rhubarb with sugar in large saucepan; stir in water.
- Bring to boil on medium heat, stirring constantly; cook 2 min.
- Remove from heat.
- Add dry gelatin mix; stir 2 min.
- until completely dissolved.
- Pour into 7 dessert cups.
- Refrigerate 3 hours or until firm.
