Hearty Kale and Bean Salad

  1. In large serving bowl, mix kale and thinly sliced Brussels sprouts.
  2. In small bowl, whisk lemon juice, garlic, salt, and pepper.
  3. Whisk in olive oil.
  4. Toss dressing with kale mixture.
  5. Add cannellini beans, toasted walnuts, and cubed Pecorino cheese; toss again.
  6. Serve with toast (optional).
