Hearty Kale and Bean Salad
- 1 bunch Tuscan kale
- 8 oz. Brussels sprouts
- 3 tbsp. lemon juice
- 1 clove garlic
- 1/4 tsp. salt
- 1/4 tsp. Pepper
- 3 tbsp. extra-virgin olive oil
- 1 can cannellini beans
- 13 c. toasted walnuts
- 4 oz. Pecorino cheese
- Toast (optional)
- In large serving bowl, mix kale and thinly sliced Brussels sprouts.
- In small bowl, whisk lemon juice, garlic, salt, and pepper.
- Whisk in olive oil.
- Toss dressing with kale mixture.
- Add cannellini beans, toasted walnuts, and cubed Pecorino cheese; toss again.
- Serve with toast (optional).
