Basic Roasted Garlic Mashed Potatoes Recipe

  1. Preheat oven 400iF.
  2. Place garlic (unpeeled) on a square of aluminum foil.
  3. Drizzle with oil and seal.
  4. Roast for 45 min, or possibly till tender.
  5. Squeeze garlic out of peels.
  6. Mash with a fork and set aside.
  7. Place potatoes in a pan and cover with lightly salted water.
  8. Bring to a boil and simmer till tender, about 15 min; drain.
  9. Place back in pan and set over low heat to evaporate remaining water.
  10. Meanwhile, place half-and-half and butter in a small saucepan.
  11. Hot over low heat till butter melts; hold hot.
  12. Mash potatoes along with roasted garlic.
  13. Stir in warmed butter and half-and-half and season with salt and pepper.
  14. Serve immediately.
