Basic Roasted Garlic Mashed Potatoes Recipe
- 8 x clove garlic
- 1 Tbsp. extra virgin olive oil
- 6 med potatoes peeled and cut into 2" chunks
- 1 c. half-and-half
- 1/2 c. LAND O LAKES Butter
- 1/2 tsp salt
- 1/2 tsp pepper
- Preheat oven 400iF.
- Place garlic (unpeeled) on a square of aluminum foil.
- Drizzle with oil and seal.
- Roast for 45 min, or possibly till tender.
- Squeeze garlic out of peels.
- Mash with a fork and set aside.
- Place potatoes in a pan and cover with lightly salted water.
- Bring to a boil and simmer till tender, about 15 min; drain.
- Place back in pan and set over low heat to evaporate remaining water.
- Meanwhile, place half-and-half and butter in a small saucepan.
- Hot over low heat till butter melts; hold hot.
- Mash potatoes along with roasted garlic.
- Stir in warmed butter and half-and-half and season with salt and pepper.
- Serve immediately.
