Chicken Taco Pie Recipe
- 1 c. minced onion
- 2 tbsp. taco seasoning (or possibly to taste)
- 1 3/4 tbsp. chili pwdr
- 1/4 teaspoon pepper
- 1 1/2 c. lowfat sour cream
- 6 to 8 tortillas
- 1 teaspoon salt
- 3 cans cream of mushroom soup
- 3 c. cubed chicken
- 1 c. Cheddar cheese
- 1 tbsp. veg. oil
- In skillet cook onions in oil till tender.
- Add in seasoning, mushroom soup and lowfat sour cream.
- Heat and stir till smooth and hot; add in chicken.
- Oil a 2 to 3 qt flat casserole and cover the bottom with torn-up oiled tortillas.
- Spread 1/2 of chicken mix on tortillas, then cover with remaining filling.
- Sprinkle with cheese.
- Bake at 350 degrees till warm and bubbly.
- Makes 6 to 8 servings.
