Pumpkin Cookies
- 12 cup shortening
- 1 cup sugar
- 12 cup brown sugar
- 2 eggs
- 1 12 cups fresh cooked pumpkin
- 1 teaspoon lemon juice
- 2 12 cups flour
- 14 teaspoon ginger
- 2 teaspoons baking soda
- 12 teaspoon baking powder
- 1 teaspoon cinnamon
- 12 teaspoon nutmeg
- 1 cup nuts (optional) or 1 cup chocolate (optional)
- Cream together the first 6 ingredients.
- Add dry ingredients and mix well.
- Drop by the teaspoonful onto greased cookie sheets.
- Bake 12-15 minutes at 375F.
