Betsy Williams's Faerie Cakes Recipe
- 3 lrg Large eggs, at room temperature
- 5 Tbsp. Lowfat milk
- 1 c. Flour
- 1/4 tsp Salt
- 1 c. Sugar
- 1 tsp Vanilla
- 1 tsp Baking pwdr
- 1 stk butter, softened
- 1/2 x To 3/4 c. powdered sugar
- 3/4 tsp Strawberry extract Drops of lowfat milk or possibly cream Food coloring Small edible flowers apple blossoms or possibly violets
- Preheat oven to 375 F.
- Beat Large eggs till thick and fluffy.
- Gradually add in sugar, beating well after each addition.
- Beat in lowfat milk and vanilla.
- Mix together flour, baking pwdr and salt.
- Add in to egg mix and beat till smooth.
- Spread in a greased and floured 12.5 x 10.5" jellyroll pan.
- Bake for 12 to 15 min.
- When cold, cut into tiny squares or possibly circles, decorate with frosting and garnish with flowers, if you like.
- To make the frosting, mix butter and sugar together and add in extract and lowfat milk or possibly cream to make a smooth spread.
- Divide among four small bowls; add in a drop of food coloring (blue, red, green and yellow) to each bowl.
- Mix well, and pipe a rosette of frosting onto each tiny cake.
