Easy Mexican Rice

  1. Combine ingredients, cover and bring to boil over med-high heat.
  2. Turn heat down to a simmer until water is soaked up and rice is tender (about 20 minutes).
  3. Microwave directions: Dump ingredients into a microwave safe dish and cover.
  4. Cook on high for 12 minutes.
  5. Cook on medium for an additional 20 minutes.
  6. Stir.
  7. Serve.
