Broccoli-Swiss Soup
- 2 (14 ounce) cans chicken broth
- 1 (16 ounce) package fresh broccoli florets
- 12 cup chopped onion (1 medium)
- 2 teaspoons bottled roasted garlic
- 1 cup shredded swiss cheese (4 oz.)
- 1 cup half-and-half or 1 cup light cream
- 12 cup cubed cooked ham
- In a large saucepan, combine broth, broccoli, onion, and roasted garlic.
- Bring to a boil; reduce heat, cover, and simmer about 10 minutes or until broccoli is very tender.
- Place half of the broccoli mixture in a blender or food processor.
- Cover and blend or process until smooth.
- Transfer to a bowl; repeat with remaining broccoli mixture.
- Return all of the mixture to the saucepan.
- Bring broccoli mixture to simmering.
- Add cheese; cook and stir until cheese melts.
- Stir in half-and-half and ham; season to taste with salt and ground black pepper.
