Marinated Baby Marrow (Courgette/Zucchini)

  1. Mix lemon juice; olive oil; salt and garlic together and place in an airtight container.
  2. Slice baby marrow in half lengthwise.
  3. Boil for 4 minutes and remove from water promptly and dunk into marinade.
  4. Seal container and refrigerate until cold.
