Frozen Citrus Mini Cheesecakes
- 1 cup Philadelphia Light Cream Cheese Product
- 1 cup frozen orange juice concentrate, thawed
- 1 tsp. each: sugar and grated orange peel
- Beat cream cheese product with juice concentrate with wire whisk until well blended.
- Add sugar and orange peel; mix well.
- Spoon evenly into eight paper-lined muffin cups.
- Freeze several hours or until firm.
- When ready to serve, peel off paper cups; invert desserts onto dessert plates.
- Store leftovers in freezer.
