Spicy Ginger Salad Dressing

  1. purchase candied ginger or use ginger root pealed and cut into long thin slices 2mm x 2mm by what ever lenth.
  2. boil in 2-4 cups of water for 20 min then remove ginger and retain 1/4 cup of water.
  3. add ginger and the same wt of sugar to a sauce pan and also add the 1/4 cup of water that is left over from the boil.
  4. cook down until a sticky conglomeration is left and then dry on cookie sheets that are sprayed with non stick seasoning.
  5. combine the vinegar, mustard, ginger, soy sauce, salt, pepper, honey, and wasabi paste in a food processor.
  6. then add the olive oil slowly while blending.
  7. this will make a very strongly flavored dressing.
  8. you can add balsamic vinegar to the end product for a slightly different taste if desired, also garlic can be added if desired.
