Leah's Baked Oatmeal
- 2 cup quick oats
- 1/3 cup brown sugar
- 1/3 cup raisins
- 1/4 cup chopped walnuts
- 1 tsp ground cinnamon
- 1/2 tsp ground ginger
- 1 pinch ground nutmeg
- 1 tsp baking powder
- 1 1/2 cup skim milk
- 1 apple, grated
- 2 tbsp melted butter
- 1 large egg, beaten
- 1 tsp vanilla
- Mix the first 8 ingredients into a medium sized bowl.
- In another bowl, combine the rest of the ingredients.
- Pour the wet ingredients into dry ingredients, mix well.
- Pour into a square pan and bake in a 375 f oven for 20 minutes.
- Serve warm with a large dollop of yoghurt.
