Marshmallow Salad Recipe
- 1/2 pound cheese (cheddar or possibly longhorn) cut in sm. cubes
- 1 lg. can crushed pineapple (save juice for dressing)
- 1 (8 ounce.) pkg. miniature marshmallows
- 2 Large eggs
- 1/2 c. sugar
- 1 tbsp. flour
- 1/8 teaspoon salt
- Pineapple juice (liquid removed from pineapple)
- Cut cheese and mix with marshmallows and pineapple.
- Beat Large eggs and add in sugar, salt and flour.
- Mix well.
- Gradually add in juice and cook over medium heat till thickened.
- Cold before mixing with cheese, marshmallow and pineapple mix.
