Homemade Mayonnaise

  1. Place the soy milk in the bowl of a food processor or blender.
  2. Add the oil 2 tablespoons at a time until all the oil is incorporated.
  3. (A slow, thin stream works well.)
  4. Stir in the remaining ingredients and transfer the mayo into a bowl and store in the refrigerator.

soy milk, safflower oil, freshly squeezed lemon juice, maple syrup, dry mustard, kosher salt
