Pesto Rice Salad
- 2 cup Minute White Rice, uncooked
- 1 packages basil pesto sauce
- 1 cup cherry tomatoes, halved
- 8 oz whole milk mozzarella cheese, cut into half inch cubes
- 1/3 cup shredded parmesan cheese
- 1 pine nuts
- Prepare rice according to package directions, place in large bowl.
- Let stand 10 minutes.
- Add pesto sauce, mix well.
- Gently stir in tomatoes and cheese.
- Sprinkle with pine nuts.
