Beef Flank Steak & Rice-Cranberry Pilaf
- 1 Tbsp. KRAFT Balsamic Vinaigrette Dressing
- 3 oz. extra lean beef flank steak Safeway 1 lb For $5.99 thru 02/09
- 2 Tbsp. orange juice
- 1/3 cup instant brown rice, uncooked
- 2 Tbsp. dried cranberries
- 1 Tbsp. PLANTERS Sliced Almonds
- 3/4 cup chopped frozen broccoli
- 1 fresh apricot, sliced
- 1/4 cup fat-free sorbet or sherbet
- 8 fl oz (1 cup) drinking water
- Pour dressing over beef; marinate 30 min.
- to overnight in refrigerator.
- Grill or broil beef 3 to 5 min.
- per side, or until cooked to desired doneness.
- Mix orange juice and 1/3 cup water in small saucepan; bring to boil.
- Stir in rice and cranberries; return to boil.
- Reduce heat to medium-low and cover.
- Simmer 5 min.
- Remove from heat and let stand 5 min.
- Stir in almonds just before serving.
- Steam broccoli as directed on package.
- Enjoy an apricot topped with sorbet for dessert.
- Serve meal with a glass of water.
