Tomato, Almond, and Lettuce Salad with Smoked Salmon, Walnut Vinaigrette, and Dill
- 1/4 pound smoked salmon, cut into 1-inch pieces
- 2 tomatoes, cut into wedges
- 4 cups mixed salad greens
- 1/4 cup slivered almonds, toasted
- 2 tablespoons walnut wine vinegar
- 1 teaspoon Dijon mustard
- 1/2 teaspoon mustard powder
- 3 tablespoons vegetable oil
- Salt and freshly ground pepper to taste
- 2 tablespoons chopped fresh dill
- 2 tablespoons chopped fresh chives
- Gently toss together the smoked salmon, tomatoes, greens, and toasted almonds in a salad bowl.
- Whisk together the vinegar, mustard, mustard powder, oil, and salt and freshly ground pepper to taste in a small bowl.
- Pour over the salad, mix, and sprinkle with the dill and chives just before serving.
