Adrienne Barbeau's Yams
- 7 lbs yams, boil tender, cool (peel)
- 12 cup butter (divided use)
- 1 pinch salt
- 12 teaspoon pepper
- 13 cup honey
- 12 teaspoon nutmeg
- 13 teaspoon cinnamon
- 3 granny smith apples (apples, peel, core, thin)
- 14 cup butter (cut squares)
- Mash yams with 1/4 c butter -- salt and pepper.
- Melt 1/4 cup butter with nutmeg and honey.
- Pour into bottom of casserole and layer with apples.
- Add mashed yams and top with cinnamon and 1/4 cup butter squares.
- Bake at 350 degrees for 45 minutes until bubbling.
