Dr. Pepper /Mexi Coke Peanut Brittle
- 1 14 cups sugar
- 34 cup butter (1 1/2 sticks)
- 1 12 teaspoons salt
- 12 teaspoon cayenne
- 14 cup Dr. Pepper cola or 14 cup Coca-Cola, with sugar not high fructose corn syurp
- 2 cups dry roasted salted peanuts, shelled
- 12 teaspoon baking soda
- Line a baking sheet with parchment paper.
- Combine all the ingredients except for the baking soda in a pot, cook on medium heat and bring to a boil stirring often.
- When the temperature reaches 290 degrees, remove from heat and stir in soda.
- Mixture will foam up and double in size.
- Spread mixture thin on baking sheet using a silicone spatula.
- When mixture cools and hardens (about half an hour), break into pieces and serve.
