Turkey Stuffed Peppers
- 2 large green or red bell peppers
- 1/2 c. chopped onions
- 1/2 lb. lean ground turkey
- 3/4 c. fresh or frozen corn
- 3/4 c. cooked brown rice
- 1/2 c. parsley, chopped
- 1/4 c. grated low calorie Mozzarella cheese (1 oz.)
- 2 garlic cloves, chopped
- 2 Tbsp. tomato paste
- 2 Tbsp. Worcestershire sauce
- 1/3 tsp. ground black pepper
- Cut peppers lengthwise to form oval boats; remove seeds.
- Boil them for 5 minutes or microwave them.
- Drain and rinse with cold water.
- In 10-inch frypan, saute onions and garlic for 2 minutes. Add ground turkey, tomato paste and corn, stirring frequently; cook 5 minutes.
- Add rice, Worcestershire sauce and pepper; cook 2 minutes on low heat.
- Fill each pepper boat with 1/4 of cooked turkey mixture.
- Sprinkle each with cheese and broil or microwave on High for 2 minutes.
- Serves 4. Contains 189 calories each serving.
