Tuna Nicoise Melt

  1. Preheat the broiler.
  2. 1.
  3. In a small bowl, whisk together oil, mustard and vinegar with a fork.
  4. Add tuna and toss to combine.
  5. 2.
  6. Open up the pita and spread tuna evenly.
  7. Add olives, egg, parsley (if using) and cheese evenly over the tuna.
  8. Spray vegetable oil spray on the outside of the bread, or brush with a little oil.
  9. 3.
  10. Place sandwich on a lined baking sheet and heat a few inches from broiler until cheese is just melted, about 2-4 minutes.
