Tuna Nicoise Melt
- 1 Tablespoon Vegetable Oil, Such As Canola
- 1 teaspoon Dijon Mustard
- 1 teaspoon Red Wine Vinegar
- 3 ounces, weight Canned Or Jarred Tuna, Packed In Oil Or Water
- 1 whole Whole Wheat Pita, Or 2 Sandwich Bread Slices
- 3 whole Black Olives, Pitted And Thinly Sliced
- 1 whole Hardboiled Egg, Thinly Slices Crosswise
- 1 Tablespoon Chopped Fresh Parsley
- 2 ounces, weight Thinly Sliced Melting Cheese, Such As Fontina
- Vegetable Oil Spray As Needed
- Preheat the broiler.

- In a small bowl, whisk together oil, mustard and vinegar with a fork.
- Add tuna and toss to combine.

- Open up the pita and spread tuna evenly.
- Add olives, egg, parsley (if using) and cheese evenly over the tuna.
- Spray vegetable oil spray on the outside of the bread, or brush with a little oil.
- 3.
- Place sandwich on a lined baking sheet and heat a few inches from broiler until cheese is just melted, about 2-4 minutes.
