Beer And Cheddar Muffins Recipe
- 2 tbsp. unsalted butter
- 1 1/4 c. cornmeal
- 3/4 c. flour
- 2 tbsp. sugar
- 1 tbsp. baking pwdr
- 1/2 teaspoon cayenne pepper
- 1 sm. onion, chopped
- 1 egg
- 1 c. beer
- 1 1/2 c. grated cheddar cheese
- Heat butter and set aside.
- In large mixing bowl add in flour, cornmeal, sugar, baking pwdr, and cayenne.
- Add in beer and egg to melted butter; mix.
- Make a well in the center of the dry ingredients and pour in beer mix.
- Stir briskly to combine being careful not to over stir.
- (Batter should be lumpy.)
- Stir in cheese.
- Fill muffin c. 2/3 full.
- Bake at 400 degrees for 20 to 25 min.
- Remove immediately and cold on wire rack.
