Slow-Cooked Orange Chicken
- 1 large sweet potato
- 1 lb boneless skinless chicken thighs
- 2 teaspoons Asian seasoning, blend
- 12 cup orange marmalade
- 12 tablespoon rice or 12 tablespoon cider vinegar
- 12 tablespoon reduced sodium soy sauce
- Peel and dice sweet potato and place in slow cooker.
- Place chicken on top and sprinkle with seasoning.
- Top with marmalade, vinegar and soy sauce.
- Cook on high for 3 to 4 hours, or low for 6 to 8 hours, until chicken is cooked through and sweet potatoes are fork-tender.
- Serve over rice.
