Chicken Breast With Cheese and Chilies
- 8 boneless skinless chicken breast halves
- 1 cup monterey jack cheese, shredded
- 4 ounces diced green chilies
- 12 cup green onion, chopped
- 4 slices bacon, cooked crisp and crumbled
- 1 medium avocado, chopped
- 1 cup sour cream
- Lay chicken breasts in 9x13 pan; cover tightly with foil.
- Bake in 350* oven for 15 minutes.
- Mix cheese and chilies.
- Cover each breast equally with mixture, patting to hold in place.
- Sprinkle chicken evenly with green onion and crumbled bacon.
- Return to oven and bake, uncovered, until chicken is white in center of thickest piece and cheese melts, about 10 minutes.
- Scatter avocado over chicken.
- Serve with sour cream to taste.
