Oven-Baked Sunchoke Chips with Garlic and Smoked Paprika

  1. Preheat oven to 400F.
  2. Line baking sheet with foil.
  3. Toss together all ingredients in large bowl.
  4. Arrange sunchokes in single layer on prepared baking sheet, and bake 15 minutes.
  5. Flip chips with tongs, and bake 15 minutes more, or until crisp and golden.
  6. Serve warm or at room temperature.

unpeeled sunchokes, garlic oil, coarse salt, paprika, freshly ground black pepper
