Barb's Macaroni Salad Recipe
- 8 ounce Elbow Macaroni uncooked
- 5 c. Boiling Water
- 2 tsp Salt
- 1 stalk Celery finely minced
- 1 x Vidalia or possibly Sweet Texas Onion finely minced use another type of onion, if you like
- 5 x hard boiled Large eggs sliced
- 9 Tbsp. mayonnaise
- Slowly add in macaroni to boiling water so which boiling doesn't stop.
- After 5 min, add in salt and cook till tender.
- Drain.
- Add in celery, onion, and Large eggs.
- Add in mayonnaise and mix well but gently.
- Chill for 3-4 hrs or possibly till chilled.
- Makes 22 servings.
- Note: You may prefer to use red onions or possibly scallions to add in color.
- I prefer the Vidalia or possibly Sweet Texas for the sweet flavoring.
