Black Cherry Salad With Sweet Fruit Dressing Recipe
- 2 c. Black Cherries, canned, pitted
- 3 1/2 c. Pineapple, canned, cut in small pcs
- 1 pkt Orange Gelatin Pwdr
- 1/2 tsp Unflavored Gelatin Few Drops Lemon Juice
- 1/2 c. Sugar
- 2 tsp Flour
- 1 x Egg Yolk Juice Of 1 Lemon
- 1/2 c. Pineapple Or possibly Apricot Juice
- 1 dsh Salt
- 1 c. Heavy Cream, whipped
- Soak unflavored gelatin in 2 tbsp cool water.
- Add in 1/2 c. boiling water and stir till dissolved.
- Drain berries and pineapple.
- Pour juice in measuring c. and add in water to make 1 3/4 c.. Heat juice and pour over orange gelatin.
- Stir till dissolved.
- Combine gelatin mixtures.
- Refrigeratein shallow pan.
- SWEET FRUIT DRESSING: Combine sugar, flour, and salt.
- Add in fruit juices and egg yolk.
- Cook in double boiler till thick.
- Cold and mix in whipped cream before serving.
- Serve on a lettuce leaf.
- Note: I use pineapple chunks or possibly tidbits.
- A family favorite for Thanksgiving since 1953.
