Moroccan-style Steaks

  1. Prepare Skillet Steaks: Pat steaks dry with paper towels.
  2. Sprinkle steaks with salt and pepper.
  3. In nonstick 12-inch skillet, heat oil over medium-high heat until hot.
  4. Add steaks and cook 5 to 6 minutes for medium, turning steaks over once.
  5. When steaks are done, transfer to platter with any juice; cover with foil.
  6. Prepare Moroccan-style Sauce: In same skillet, heat oil over medium heat until hot.
  7. Add yellow or red pepper, cumin, cinnamon, and 1/4 cup water and cook about 5 minutes or until pepper is tender, stirring occasionally.
  8. Stir in salsa, brown sugar, and another 1/4 cup water; heat to boiling over medium-high heat.
  9. Boil 1 minute or until slightly reduced.
  10. Remove skillet from heat; stir in chopped cilantro.
  11. Return steaks with their juice to skillet; heat through.
  12. Garnish with cilantro sprigs.
