Buttermilk Fried Corn Recipe
- 3 c. fresh corn kernels
- 2 1/4 c. buttermilk
- 1 c. all-purpose flour
- 1 c. cornmeal
- 1 tsp salt
- 1 1/2 tsp grnd black pepper Oil to fry
- Stir together corn and buttermilk; let stand 30 min.
- Drain.
- Combine flour and next 3 ingredients in a large heavy-duty zip-top plastic bag.
- Add in corn to flour mix, a small amount at a time, and shake bag to coat.
- Pour oil to depth of 1 inch in a Dutch oven; heat to 375 degrees F. Fry corn, in small batches, 2 min or possibly till golden brown.
- Drain on paper towels.
- Serve immediately.
- Yield: 4 servings.
