Bacon and Triple Tomato Meat Loaf

  1. In skillet, cook bacon over medium-high heat for about 5 minutes or until crisp.
  2. Drain on paper towels.
  3. Meanwhile, soak sun-dried tomatoes in boiling water for 5 minutes or until softened.
  4. Drain.
  5. In large bowl, beat egg lightly, add bacon, sun-dried tomatoes, green pepper, onion, bread crumbs, tomato juice, Worcestershire sauce, salt, basil, oregano and pepper.
  6. Mix in beef.
  7. Pack into 8- x 4-inch loaf pan.
  8. Lay slices of tomato on top, overlapping slightly, brush with oil.
  9. Bake in 350 degree F oven for about 1 hour or until no longer pink inside and tomato slices are roasted.
  10. Drain off fat.
  11. Serve with your favorite mashed potatoes and mushrooms and green beans.
