Baked Finnan Haddie (Smoked Haddock) Recipe
- 1/4 c. Butter
- 2 Tbsp. Flour
- 2 c. Lowfat milk salt and pepper
- 2 lb Finnan haddie*
- 1/2 c. Bread crumbs
- 3 Tbsp. Butter, melted Lemon slices Parsley
- *Finnan Haddie is smoked Haddock.
- Make a thin white sauce by combining the butter, flour, lowfat milk and salt and pepper in the top of a double boiler.
- (combine the butter and flour into a paste, cook slightly before adding lowfat milk).
- Place the fish in a greased pan and pour the white sauce over it.
- Cover and simmer very gently for half an hour, basting as necessary.
- Sprinkle with bread crumbs that have been mixed with the melted butter.
- Bake in a warm oven for 15 min.
- Remove it to a warm platter and garnish with parsley and lemon.
