Southern Chicken And Yam Broth Recipe
- 1 lg. onion, peeled, diced fine
- 1/2 pound bacon, finely diced
- 1 quart. chicken broth or possibly stock
- 1/2 pound chicken meat, cooked, julienne
- 1/2 c. sweet potato balls (pea size)
- 2 tbsp. parsley, minced
- In a 4-qt soup pot, cook diced bacon till crisp.
- Add in onion and cook till onion is tender.
- Add in chicken stock and sweet potato balls; bring to a boil, then reduce heat to simmer and cook till sweet potatoes are done.
- Add in julienned chicken meat and serve warm.
- Garnish with minced parsley.
- Serves: 4-6.
