Sirloin with Herbed Wine Sauce
- 2 lbs lean boneless sirloin (3/4" thick)
- 14 lb fresh mushrooms, sliced
- 12 cup chopped green onion
- 34 cup dry red wine
- 34 cup water
- 2 tablespoons tomato paste
- 1 teaspoon dried tarragon
- 1 beef bouillon cube
- 2 tablespoons chopped fresh parsley
- Coat a large skillet with non-stick cooking spray and brown steak.
- Add sliced mushrooms and green onion, sauteing til tender.
- Add wine, water, tomato paste, tarragon, and bouillon.
- Bring to a boil, reduce heat and cook 10 minutes or till meat is tender and liquid is reduced by half.
- Stir in parsley and serve.
