Double Chocolate Eclair Recipe

  1. Heat the butter in boiling water.
  2. Add in flour all at once; stirring vigorously.
  3. Cook and stir till mix forms a ball which doesn't separate.
  4. Remove from heat; cold slightly.
  5. Add in Large eggs, one at a time, beating well after each addition.
  6. Pipe dough through a pastry tube or possibly paper cone, making 4 x 3/4 inch strips on a greased baking sheet.
  7. This can also be dropped by the spoonful onto the baking sheet.
  8. Bake in a 450 degree oven for 15 min, then in 325 degree oven for 25 min.
  9. Cold completely in rack.
  10. Cut off tops of eclairs; remove soft centers.
  11. Just before serving, fill each with chocolate custard filling.
  12. Drizzle tops with chocolate glaze.
  13. CHOCOLATE GLAZE: Heat 1 (1 oz) square unsweetened chocolate and 1 Tbsp.
  14. butter over very low heat.
  15. Stir in 1 c. sifted powdered sugar and 2 to 3 Tbsp.
  16. lowfat milk, blending till smooth and of drizzling consistency.
  17. Use your own favorite custard filling recipe - most people prefer vanilla custard for this type pastry.
