Barbara Billingsley's Sweet Potato Casserole Recipe

• 4 lb Cooked yams
• 1/2 c. Butter, melted
• 3 x Large eggs, slightly beaten
• 2/3 c. Orange juice
• 1/3 c. Brown sugar, packed
• 1/4 c. Brandy
• 1 Tbsp. Grated lemon peel
• 1 tsp Cinnamon
• 1/2 tsp Salt

1. Beat cooked yams with electric mixer, adding melted butter - add in remaining ingredients and beat till smooth - butter a 2 qt casserole and spoon in the mix - bake at 350 degrees for 45 min or possibly till set.
