Sausage, Peppers And Rice Casserole
- 1 lb. mild Italian sausage (can use turkey sausage)
- 1/4 c. water
- 1 Tbsp. olive oil
- 2 sweet onions, coarsely chopped
- 1 clove garlic, minced optional
- 1 large green pepper coarsely chopped
- 1 Tbsp. chopped fresh basil or 1 tsp. dried
- Salt and freshly ground pepper
- 1 1/2 c. basmati or good quality long grain white rice
- 3 1/2 c. low sodium chicken broth or water
- 1 bay leaf
- About 1/2 c. grated parmesan cheese
- Preheat the oven to 350u0b0. In a large casserole, heat the Italian sausage with 1/4 cup water over high heat and cook for 6 minutes, or until the water is gone. Remove the sausage and let cool slightly. Slice the sausage into 1 inch pieces and set aside.
