Roasted Mushrooms (21 Day Wonder Diet: Day 13)
- 4 flat mushrooms
- 12 cup low-fat ricotta cheese
- 2 tablespoons flat leaf parsley, coarsely chopped
- 2 green onions, chopped finely
- 1 garlic clove, crushed
- Preheat oven to 200C.
- Place mushrooms, stem side up, on oven tray.
- Roast, uncovered, about 15 minutes.
- Meanwhile, combine remaining ingrediens in small bowl.
- Serve mushrooms topped with cheese mixture.
